Seed of the almond takes 27% to 58% of it’s total weight. Shell protects the seed from the destructive effect of oxygen and light.

 

Shelled nuts gradually become less and less source of vitamins and other useful substances. Kernels of almond contain 40% to 70% fatty oil, about 30% protein substances, carbohydrates, vitamins with predominance of vitamin Е, calcium, coloring materials lycopene, carotin and carotenoids, about 0,8% of volatile essence, which determines the smell.

 

The fatty oil contains 80% of oleic acid glycerides and 15% of linoleic acid, protein substances, vitamins, emulsion ferment.
